It finally happened. Anjali had been threatening to harvest the overabundance for weeks. We ate dandelion greens.
Weeds. We ate weeds.
It helped (didn’t help) that our yard is full of them because we’ve lived here for one a month and given nothing more to our lawn than two really bad haircuts with the jinky mower the previous owners left.
We also roasted some beets, sliced them up, and made a roasted beet grilled cheese with tomato basil goat cheese. But let’s focus on the important part. Here is Anjali’s dandelion greens recipe.
Ingredients:
- Dandelion greens
- Red pepper flakes
- Garlic
- Lemon
Instructions:
- Sauté everything together
- Taste them
- Realize they’re bitter af
- Add some honey
Honestly? They were good and I would do it again.
